Uwielbiam wszelkiego rodzaju zupy i gdybym tylko mogła, jadłabym je codziennie. Do moich ulubionych zup należy nasza tradycyjna, niezawodna pomidorowa – obowiązkowo z makaronem i dużą ilością czosnku. Dla mnie pomidorowa to zupa świetna na wszystkie okazje – można ją ugotować o każdej porze roku. Czasem jednak trzeba zrobić ukłon w stronę domowników i zaserwować coś innego, dzięki czemu nie będzie słychać westchnień typu: ‚dlaczego ciągle jemy pomidorową’? Taką właśnie idealną odmianą jest zupa z czerwonej soczewicy i papryk. Gęsta, aromatyczna, z wyczuwalnymi kawałkami warzyw a dzięki dodatkowi czerwonej soczewicy bardzo zdrowa i pożywna. W sam raz na pierwsze jesienne chłody. Czego chcieć więcej?

Składniki:

  • połowa niedużej cebuli
  • 1 nieduży seler naciowy
  • 1 mały por
  • 2 czerwone papryki
  • 1 marchewka
  • 4 pomidory lub 400g puszka pomidorów
  • 200g czerwonej soczewicy
  • około litr bulionu warzywnego
  • 2 ząbki czosnku
  • 1-2 łyżki oliwy
  • przyprawy: sól, pieprz, słodka lub ostra papryka (zależnie od naszych upodobań)
  • do podania: świeżo pokrojona pietruszka, ewentualnie chrupiące pieczywo

Wykonanie:

  1. W garnku rozgrzać oliwę. Dodać pokrojoną w drobną kostkę cebulę, selera, pora i marchewkę. Smażyć przez około 10-15 minut aż warzywa będą miękkie. Następnie dodać paprykę pokrojoną w kostkę i podsmażać przez kolejne 5 minut.
  2. Soczewicę zalać zimną wodą, wypłukać, odcedzić i dodać do garnka z warzywami. Jeśli używamy świeżych pomidorów należy je obrać i pokroić w drobną kostkę i w tym momencie dorzucić do garnka (podobnie postępujemy w przypadku pomidorów z puszki).
  3. Całość zalać bulionem, doprawić solą, pieprzem i słodką/ostrą papryką, doprowadzić do wrzenia po czym zmniejszyć ogień i gotować przez około 25 minut lub do momentu kiedy soczewica stanie się miękka.
  4. Pod koniec gotowania dodać przeciśnięty przez praskę czosnek i pokrojoną pietruszkę, ewentualnie jeszcze doprawić do uzyskania pożądanego smaku.
  5. Zupa świetnie smakuje z chrupiącym pieczywem lub tostami.
