Zimowa zupa soczewicowa

Chociaż mamy początek grudnia i niektórzy powoli zaczynają planować świąteczne menu i testować nowe przepisy, które pojawią się na wigilijnym stole, u mnie ciągle dominują zupy albo różnego rodzaju curry warzywne. Kiedy robi się chłodniej – a o dziwo w tym tygodniu temperatura w UK spadła do minus 5 stopni C – potrzebujemy czegoś, co nas rozgrzeje i jednocześnie nasyci. W takie dni najłatwiej chyba jest ugotować jakąś nieskomplikowaną zupę, koniecznie z dużą ilością warzyw. W mojej dzisiejszej, zimowej wersji zupy soczewicowej – obok zielonej soczewicy aż gęsto od różnych warzyw – znajdziecie w niej m.in. marchew, pietruszkę, jarmuż, brokuły – tak naprawdę użyłam po trochu wszystkiego, co miałam pod ręką – chodziło o to, żeby było treściwie. Dla zaostrzenia smaku ugotowaną zupę doprawiłam grubo mielonym pieprzem i oliwą o smaku chili – dzieki temu zupka przyjemnie rozgrzewa. Polecam na mroźne dni.

Składniki:

  • 1 łyżka oliwy
  • 1 średnia cebula
  • 2 ząbki czosnku
  • 2 marchewki
  • 1/2 pietruszki
  • 1 mały ziemniak
  • 1 średni pomidor
  • 3/4 szklanki zielonej soczewicy
  • 3 szklanki bulionu
  • 2 szklanki wody
  • po szczypcie: soli, grubo mielonego pieprzu i ostrej papryki
  • 1 łyżeczka słodkiej papryki
  • 1 łyżka suszonych warzyw – tzw. domowej ‚vegety’
  • kilka różyczek brokuła
  • garść jarmużu
  • 100ml passaty pomidorowej lub 2 łyżki koncentratu pomidorowego
  • do podania: listki bazylii, oliwa smakowa np. bazyliowa lub chili, grubo mielony pieprz

Wykonanie:

  1. W garnku rozgrzać łyżkę oliwy, dodać cebulę pokrojoną w kostkę i drobno posiekany czosnek, zeszklić.
  2. Do cebuli i czosnku dodać umyte i pokrojone w kostkę marchewki, pietruszkę i ziemniaka. Wymieszać, podsmażać przez około 4 minuty po czym dodać obranego ze skórki i pokrojonego w kostkę pomidora. Całość posolić i smażyć przez 2 minuty.
  3. Dodać opłukaną soczewicę, wymieszać.
  4. Wlać bulion, wodę, dodać przyprawy (pieprz, papryki, suszone warzywa). Garnek przykryć pokrywką i gotować na niezbyt dużym ogniu przez około 20 minut.
  5. Następnie dodać brokuły pokrojone na mniejsze cząstki, jarmuż i gotować kilka minut.
  6. Na koniec wlać passatę pomidorową/koncentrat pomidorowy, wymieszać, pogotować jeszcze 2 minuty.
  7. Gotową zupę rozlać na talerze, doprawić swieżo mielonym pieprzem oraz polać odrobiną oliwy. Udekorować listkami świeżej bazylii.
