Przepis na tradycyjną zupę irańską z pęczakiem od dawna był na mojej liście rzeczy do ugotowania i teraz wreszcie się udało. Pierwsze skojarzenia, jakie mi się nasunęły po spróbowaniu zupy były takie, że zupka smakuje zupełnie jak nasz rodzimy krupnik – a po drugie – że przypomina trochę moją ukochaną pomidorową. W dzieciństwie unikałam jedzenia krupniku jak ognia i ‚przeprosiłam’ się z nim dopiero po trzydziestce kiedy zostałam wegetarianką. O tym, jakie dobre właściwości dla naszego organizmu ma kasza pęczak nie będę się rozpisywać, bo akurat w tym momencie dla mnie liczy się tylko smak (pomidorowo-koperkowy!). Dodatkowo zupa jest bardzo sycąca i rozgrzewająca, jak znalazł na jesienne chłodne dni. W niektórych przepisach irańskie kucharki dodatkowo zalecają zagęszczenie zupy sosem beszamelowym, ale moim zdaniem zupa jest już wystarczająco gęsta i treściwa. Polecam.

Składniki:

  • 1 mała cebula lub połowa średniej cebuli
  • 300g marchewki
  • 2-3 łyżki koncentratu pomidorowego
  • 1/2 szklanki kaszy pęczak
  • 1 niezbyt duży pomidor
  • 1- 1.5 litra bulionu
  • po 2 łyżki koperku i natki pietruszki (mogą być suszone lub mrożone)
  • 1 średni ziemniak
  • sól, pieprz, pieprz kajeński
  • olej do smażenia
  • do podania: koperek, razowy chleb lub bagietka czosnkowa, kawałki cytryny lub limonki

Wykonanie:

  1. W garnku, w którym będziemy gotować zupę rozgrzać łyżkę oleju. Dodać obraną, pokrojoną w kosteczkę cebulę oraz obraną i startą na wiórki marchewkę.
  2. Warzywa smażyć aż będą miękkie po czym dodać koncentrat pomidorowy i kaszę uprzednio opłukaną pod zimną wodą.
  3. Pomidora zalać na krótko wrzątkiem, obrać ze skórki, drobno pokroić i dorzucić do garnka.
  4. Wlać bulion, dodać koperek i natkę pietruszki. Przykryć pokrywką i gotować na niezbyt dużym ogniu przez około 40 minut.
  5. W międzyczasie ziemniaka obrać ze skórki, umyć i zetrzeć na wiórki (podobnie jak poprzednio marchewki).
  6. Po około 40 minutach ziemniaka dodać do garnka, doprawić solą, pieprzem i pieprzem kajeńskim. Gotować kolejne 20 minut aż warzywa będą miękkie.
  7. Kiedy zupa jest gotowa można jeszcze ewentualnie doprawić do smaku.
  8. Podawać posypaną koperkiem i polaną sokiem z cytryny lub limonki i świeżym pieczywem, bagietką czosnkową itp.
