Sałatka z pieczonych szparagów

Sezon na szparagi trwa, warto więc skusić się i upichcić coś ze szparagami w roli głównej. Długi weekend i majowe słońce sprzyjają grillom, piknikom i wycieczkom, dlatego doszłam do wniosku, że sałatka będzie najlepszym pomysłem na wykorzystanie tegorocznych szparagów. Prostą, lekką sałatkę można spakować do pojemnika i zabrać ze sobą na wypad do parku – lub tak jak ja dzisiaj – na lunch do pracy. Polecam!

Składniki:

  • 100g młodych, zielonych szparagów + łyżka oliwa do posmarowania szparagów
  • 2 porcje ulubionego makaronu (np. pełnoziarnistego, bezglutenowego czy spaghetti – ja użyłam penne)
  • 4 suszone pomidory w oleju + 2 łyżki oleju z pomidorów
  • 1/3 szklanki młodego szpinaku
  • 20 listków świeżej bazylii
  • 2 łyżki orzeszków piniowych lub ziaren słonecznika
  • 2 łyżki startego sera Cheddar
  • 1 łyżka soku z cytryny
  • sól morska i świeżo mielony pieprz

Wykonanie:

  1. Piekarnik rozgrzać do 180 stopni C. Szparagi posmarować pędzelkiem łyżką oliwy i piec w rozgrzanym piekarniku przez 10 minut, wystudzić. Każdy ze szparagów pokroić na 2-3 mniejsze kawałki.
  2. W międzyczasie ugotować makaron w osolonym wrzątku, odcedzić, wystudzić, przełożyć do miski/salaterki.
  3. Pomidory, 2 łyżki oliwy, szpinak, bazylię, orzeszki piniowe/słonecznik, ser, sok z cytryny umieścić w blenderze i krótko zmiksować. Doprawić do smaku solą i pieprzem.
  4. Do salaterki z makaronem dodać pokrojone szparagi i wymieszać z przygotowanym pesto. Można dodatkowo posypać orzeszkami piniowymi czy ziarnami słonecznika.
  5. Podany przepis to porcja dla 2 osób.
